Shrimp Fried Rice


1 # peeled shrimp
1 chopped onion
1 carrot
1 bell pepper
1 clove of garlic
1 rib of celery
1/4 cup frozen green peas
1/4 cup frozen sugar snap peas
2 eggs
5 cups cold rice(previously cooked)
2 chopped green onions
2 tablespoons butter
2 tablespoons vegetable oil
1/4 teaspoons ground ginger
1/2 teaspoon sesame oil
2 tablespoons low sodium soy sauce
Salt and pepper to taste

Cook shrimp with vegetable oil in hot skillet or wok until pink Remove Add chopped vegetables salt and pepper Cook for 1-2 minutes than push to the side Add eggs and scramble then add rice When warm add cooked shrimp Add soy sauce sesame oil butter and ginger. Adjust seasoning
